This time I have a question. You have four bowls in front of you. In each bowl is the same coffee (from the same batch). They have all be ground and measure and consist of the same ratio (coffee to water). The only difference is that you have change grind size on all four bowls.
My question is. Which bowl with you pick to use as the reference for your roasting decision?
TDS and extraction effects the taste experience and I would like to argue that a crucial difference between the best roasters and others is their average TDS and Extraction when they do their quality control (cupping format).
