I began working with coffee a year or two after moving to Copenhagen, joining Democratic Coffee Bar as a Barista in late 2015. Prior to this, I had worked for a British chocolate producer for several years, leading me to become more curious about agriculture and agronomy as well as encouraging me to improve my sensory skills. I joined the April team in 2017 and have participated in the last two National Championships, and I wish to continue competing on a yearly basis in at least one category. Coffee competitions help to provide a structure when learning new competencies, whilst at the same time helping to strengthen my existing techniques and understanding of coffee.
