About the farm
Cerro Azul is one of the 5 farms owned by Cafe Granja la Esperanza. It is a family business since they bought Finca Potosì in 1945. Specialised in growing only organic coffees, mostly specialty coffee varietals.
Cerro Azul is the smallest farm on the Granja Esperanza Estate, with 7 lots total with less than 34'000 coffee trees.

About the coffee
Rigorous picking of cherries at grape color, with brix grades of 18, fermentation is carried out for 36 hours, then it is dried. The coffee is left 48 hours in the silo (average temperature of 35 °C) then passed to solar drying for approximately 15 days.
