Our recipes

These recipes reflect the approach to coffee served in our Showroom.
The filter recipe is based on our own april Brewers (flat-based) and our april Paper Filters. As for espresso, the recipes are designed using a Modbar AV.
All of our grind settings reference a Mahlkonig EK43. You can adjust your grind settings as necessary and use the recommended brew time as a reference.

About the farm

The Pillcocaja Farm is located in the heart of the Ecuadorian Andes, at rest since more than 70 years.
Located at 1650 meters above sea level, the coffee trees grow naturally under the shade of old native trees named Faiques and it feeds on natural springs that are formed in the high parts of the mountain. ​It is our third season working with the Pillcocaja farm.

About the coffee

Sidra is a new hybrid varietal, made of Red Bourbon and Typica and combines characteristics of these two varieties. It has acquired the sweetness and the body of Red Bourbon and the bright taste and acidity of Typica.
