About the farm
The story of the La Palma y el Tucan farm has a quite singular story, located just 2 hours outside of Bogotá, the farm was founded by Felipe Sardi & Elisa Maria Madriñan. After starting the project in 2011, they bought 18 hectares lands that were originally use for cattle farming, with for ambition to challenge the current model and innovate coffee farming and milling, by building a state-of-the-art wet mill to experiment with processing, and a lab to perform all types of analysis on the coffee they grow.
About the coffee
The Bio Innovation process is a fermentation technique invented by La Palma y el Tucan, that was in development for over 2 years. With this technique, they honour the principles of organic farming, respecting the ecosystem, and learning from what it's microorganisms are adapted to.
