Our recipes
These recipes reflect the approach to coffee served in our Showroom.
The filter recipe is based on our own april Brewers (flat-based) and our april Paper Filters. As for espresso, the recipes are designed using a Modbar AV.
All of our grind settings reference a Mahlkonig EK43. You can adjust your grind settings as necessary and use the recommended brew time as a reference.
About the farm
Pillcocaja Farm is located in the heart of the Ecuadorian Andes, at rest since more than 70 years.
Located at 1650 meters above sea level, the coffee trees grow naturally under the shade of old native trees named Faiques and it feeds on natural springs that are formed in the high parts of the mountain.
It is our fifth season working with the Pillcocaja farm, and this year we have decided to include them to our Sustainable Profile line.
About the coffee
The Typica varietal is the most famous of the Typica decended varieties.
The Typica group, like all Arabica coffee, is supposed to have originated in southwestern Ethiopia. Sometime in the 15th or 16th century, it was taken to Yemen. By 1700, seeds from Yemen were being cultivated in India. In 1696 and 1699, coffee seeds were sent from the Malabar coast of India to the island of Java in Indonesia. These few seeds were the ones to give rise to what we now know as the distinct Typica variety.
