These recipes reflect the approach to coffee served in our Showroom.
The filter recipe is based on our own april Brewers (flat-based) and our april Paper Filters. As for espresso, the recipes are designed using a Modbar AV.
All of our grind settings reference a Ditting Sweet Lab 804. You can adjust your grind settings as necessary and use the recommended brew time as a reference.
About the farm
Suke Quto Farm spans highlands and valleys in the Odo Shakisso woreda, characterized by fertile volcanic soil. Maintaining soil quality, Tesfaye employs organic recycling using litterfall, coffee root residue, and shade trees. All Suke Quto coffees are certified Organic and Rainforest Alliance. Tesfaye collaborates with 171 outgrowers delivering cherries to the Suke Quto Washing and Drying Station. Additionally, he owns 221 hectares in the Guji highlands, requiring 200 seasonal workers for coffee picking and processing.
About the coffee
This coffee has been fully washed processed, with a total duration of wet fermentation between 35-48 hours, the drying was undertaken using raised beds over the following about 9 to 15 days. You can expect to find notes of jasmine, peach & Citrus.
