Drying Coffee at Volcan Azul

In this video, we're back at Volcan Azul Estate in the beautiful Alajuela Province of Costa Rica, this time joining Farmer and Owner Alejo Castro at his raised beds for a conversation about the importance of drying.

There are many ways to dry coffee, from patio drying to parabolic raised beds all the way through to mechanical driers. The way in which coffee is dried can hugely impact the structure, density and life cycle of the finished product. In this weeks video, you can hear directly from Alejo how he applies these methods to different varietals and processes on his farm.
